The story of my chocolate begins in 1980 thanks to Odilla, my mother. A well-known painter of French ceramics, she collaborated with several maitre chocolatier from beyond the Alps who purchased her handpainted porcelains. Among them also André Sauvadet who agreed to have me in his brigade. In his workshop in Lapalisse, near Vichy, I understood that this was the job I wanted to. In those years I tried to learn everything I could, from the ensemble to the mixture of ingredients, from the importance of raw materials to the most sophisticated techniques.
